Peanut Butter Pup Cake for Ellie's Birthday

It's Ellie's birthday month and we threw her a party. Since we are quarantining, it was a small party with just her big sis, Abbie and family. Ellie loves peanut butter so when it came to baking a cake, peanut butter was the obvious choice. Our pups eat a grain-free diet so the cake needed to be grain-free as well. Apples and plain Greek yogurt are also favorites of Ellie and Abbie so I included them in the recipe as well.

This cake recipe can be made as

• 9” round or square Pup Cake
• 2 - 4.5" ramekin Pup Cakes
• 6- cupcake Pup Cakes

I chose to make 2 - 4.5" ramekin Pup Cakes, which made one for Ellie and one for Abbie. The cakes baked up nicely and my kitchen smelled like peanut butter cookies. I resisted the urge to bake some peanut butter cookies for myself (like I needed any more cookies...I’ve been baking like crazy during this quarantine!) I decided to shift my focus back to our "birthday girl" and prepare the Peanut Butter Yogurt Frosting. Because of this delightful peanut butter aroma, Ellie and Abbie sat in the kitchen and watched me closely while I finished making their cakes. They watched intently, not knowing if they would get to partake in this peanut butter deliciousness. Their tails wagged when they saw the cakes being placed in their bowls.
We sang Happy Birthday to Ellie and then served each pup their own cake. Ellie didn't waste any time digging in to her cake, frosting and all. Abbie, who is a little more dainty at times, first licked off all of her frosting and then ate her cake. Ellie and Abbie enjoyed their party and especially the cake.
We’re looking forward to celebrating Abbie’s birthday in May. Johnny Cash, our kitty, has a birthday coming up in May or June. With some sort of tuna cake or bowl of cream, we’ll be celebrating his birthday as well. ❤️🐶🐶🐱

Ellie's Peanut Butter Pup Cake (Grain-Free)

Grain-free, gluten free and sugar free for your pups.
Ingredients:
Cake

• 1 cup Almond Flour
• 1/2 tsp baking soda
• Pinch of salt
• 1/8 cup vegetable oil
• 1/4 cup organic creamy peanut butter
• 3/4 cup unsweetened applesauce
• 3/4 cup plain Greek yogurt
• 1 egg

Frosting

• 3/4 cup plain Greek yogurt
• 1/4 cup Organic peanut butter

Directions for Cake

• Preheat oven to 350 degrees F.
• In a large bowl, combine almond flour, baking soda and salt.
• In a separate bowl mix together vegetable oil, peanut butter, applesauce and plain Greek yogurt. Stir in egg and mix until combined.
• Pour wet ingredients into dry ingredients and stir until well blended.
• Pour mixture into prepared baking pan. (You may use a 9”round pan or 2- 4.5” ramekins that have been prepared (greased with oil and floured with almond flour). Tip: Cut parchment paper to fit bottom of cake pan or ramekins and line pans for easy removal of cake from pans.
• Bake for approximately 25-30 minutes or until a toothpick inserted into the center comes out clean and the cake springs back when pressed lightly.
• Allow to cool on a wire rack prior to removing from pan.
• After cooling, add peanut butter yogurt frosting.

Peanut Butter Yogurt Frosting

• Mix plain Greek yogurt and peanut butter until well combined. Spread over top of cake.
• If not serving immediately, store in refrigerator

Yield: 1- 9” round cake to slice for pups
or 2- 4.5” ramekin pup cakes
or 6 pup cupcakes
